Traditionally served during monsoon seasons or as street food, pakoras are a staple at gatherings and celebrations. Today, they have gained popularity worldwide, with various regional adaptations and fillings.

1 kg gram flour (Baisan)
1/2 cup rice flour (chawal ka Aata)
1/2 cup corn flour
1/2 cup plain flour (Maida)
1 tsp baking soda
2 tsp salt
1/2 cup crushed coriander seeds
2 tsp chili flakes
1 tsp red chili powder
1 tsp turmeric powder
2 tsp chicken powder
1/2 tsp kalonji (Nigella seeds)
1/4 tsp ajwain (carom)
1 tsp orange food color
2 tsp dry fenugreek leaves (Methi)

Combine gram flour, rice flour, corn flour, and plain flour in a mixing bowl.

Add baking soda, salt, crushed coriander seeds, chili flakes, red chili powder, turmeric powder, chicken powder, kalonji, ajwain, and dry fenugreek leaves to the flour mixture.

Mix all the dry ingredients thoroughly until well combined.

Add orange food color to the mixture and mix well to ensure even coloring.

Gradually add water to the mixture to form a smooth batter.

Heat oil in a deep frying pan over medium heat.

Once the oil is hot, drop spoonfuls of the batter into the oil.

Fry until the pakoras are golden brown and crispy.

Remove from oil and drain on paper towels before serving.
