1 kg chicken
3 medium onions
2 tbsp ginger garlic paste
1/2 tsp chili powder
1/2 tsp cumin powder
1/2 tsp turmeric powder
1/2 tsp coriander powder
1 tbsp garam masala
2 blended tomatoes
salt to taste
1/4 cup yogurt
4 sliced green chilies
water
mint leaves
fresh coriander leaves
1/2 lemon juice
ghee
oil
whole spices (bay leaf, cinnamon stick, cardamom, cloves)

Wash basmati rice three times and soak it in water for 1 hour.

Heat ghee and oil in a pan over medium heat.

Add whole spices: bay leaf, cinnamon stick, cardamom, and cloves to the pan.

Add 3 medium sliced onions and sauté on high flame until brown.

Reduce heat and add 2 tbsp ginger garlic paste, sauté well.

Add 1/2 tsp chili powder, 1/2 tsp cumin powder, 1/2 tsp turmeric powder, and 1/2 tsp coriander powder; mix well.

Add 2 blended tomatoes and salt to taste; mix well and cook.

Add 1/4 cup yogurt and mix; cook on medium flame.

Add 4 sliced green chilies and mix well.

Add water and cover the pan; let the chicken cook on medium flame.

In a separate large vessel, boil water for the rice and add whole spices and salt.

Add soaked rice to boiling water and cook until 80% done; add mint and coriander leaves.

Strain the rice and set aside.

Layer the cooked chicken with gravy and rice in a separate container, adding mint, coriander, and fried onions in between layers.

Add saffron (soaked) and a teaspoon of ghee on top of the final layer.

Cover and cook on low flame for 10 minutes.

Turn off the flame and serve the biryani.
