1

In a mixing bowl, combine 1 cup of all-purpose flour, 1/8 teaspoon of cardamom powder, 1 teaspoon of Rapid rise yeast, and 2 tablespoons of cornstarch. Mix well.

2

Add 1 teaspoon of oil, 1 tablespoon of yogurt, and 3/4 cup of warm water to the dry ingredients. Mix until smooth and free of lumps.

3

Cover the batter and place the bowl in a larger bowl filled with warm water to help it rise faster. Cover the top with any kind of cover.

4

Let the batter rise in the warm environment for about 30 minutes.

5

In the meantime, prepare the sugar syrup by heating 1 cup of water and adding 1 and 1/4 cups of sugar and a pinch of saffron. Cook for 15 minutes on medium heat.

6

After 15 minutes, lower the heat and add 1/4 teaspoon of cardamom powder and 1 teaspoon of lemon juice to the syrup. Keep it on a low simmer.

7

Heat oil in a heavy-bottomed pan for frying the jalebis.

8

Once the batter has risen, mix it again and transfer it into a mustard or ketchup bottle for piping.

9

Pipe the batter into the hot oil in circular shapes, ensuring the ends connect to prevent them from breaking apart.

10

Fry the jalebis until golden brown, flipping them once they start to brown on one side.

11

Remove the jalebis from the oil and shake off excess oil before dipping them into the warm sugar syrup for a light coating.

12

After coating, place the jalebis on a plate and serve hot.
