1

Chop the stem part of the green onion into small pieces and cut the leafy part into 2-inch sections, keeping them separate.

2

Cut half of an onion into strips, breaking it apart for better cooking.

3

Remove both ends of the bean sprouts for presentation.

4

Prepare a pot of boiling water to cook the noodles.

5

Cook the fresh F noodles for 2 minutes, then taste at 1-minute intervals until slightly firmer than perfect.

6

Remove the noodles from the water when ready.

7

Add vegetable oil to a hot pan over medium-high heat and stir-fry the onion for about 15 seconds.

8

Add the bean sprouts to the pan, sprinkle with salt, and stir-fry for about 1 minute, then remove everything from the pan.

9

Add more oil to the pan and lower the heat to medium, then add the chopped green onion stems to the oil, letting them sizzle and stirring regularly.

10

When some of the green onion starts to turn golden brown, increase the heat back to medium-high and add the noodles to the pan, tossing to mix with the green onion and oil.

11

Add soy sauce, dark soy sauce, and sugar around the edge of the pan and stir-fry until the noodles are evenly colored.

12

If using thick noodles, add chicken broth to the pan and cover with a lid for about 2 minutes.

13

After 2 minutes, remove the lid and add the onion and bean sprouts back to the pan, along with the leafy part of the green onion, a touch of sesame oil, and black pepper.

14

Toss everything together to mix well and serve.
