1

Marinate meat or chicken with all the ingredients and set aside for at least 30 minutes up to overnight.

2

Boil pasta as per the packet's instructions but keep it underdone. If the packaging says 13 minutes, take it out after 11 minutes. Drain and run cold water over it to stop cooking. Add 2-3 tbsp of sesame oil and toss until all the noodles are well covered.

3

Prepare sauce by mixing together all the ingredients for the sauce.

4

To assemble the chow mein, take a wok and put it on high heat. Once hot, add in a couple tbsp of oil and sesame oil. Fry ginger and garlic paste until fragrant.

5

Add in peanuts and fry until roasted. Then add in the onions and sautรฉ for a minute followed by all the vegetables and brown sugar. Stir and sautรฉ for a couple of minutes until vegetables are cooked but still crunchy and hold their shape. Take them out of the pan and set aside.

6

In the same wok or pan, again add a tbsp of oil and fry the marinated beef strips. Once fully cooked, add in the vegetables followed by noodles.

7

Add in the sauce and toss everything until well combined. Cook the noodles on high heat until any water from noodles has dried up. Turn off the heat, cover, and let sit for 10-15 minutes.

8

Garnish with Spring Onion Shoots. Serve while hot.
