2 cups cassava meal
1 cup fresh grated coconut
1 ripe mango, diced
2 ripe bananas, mashed
1 cup fresh diced pineapple
1/2 cup dried pawpaw
1/2 cup dried banana
1/4 cup virgin coconut oil
1/4 cup honey

Grate cassava or use dry cassava meal.

Add fresh grated coconut to the cassava.

Slice a ripe mango and mash together with four or five very ripe bananas using a fork.

Soften dried pawpaw and dried banana in hot water, keeping the soaking liquid to sweeten the batter later.

Combine the mashed ripe mango and bananas with the grated cassava and coconut mixture.

Add the softened dried fruit along with some of the soaking liquid to ensure the batter is wet enough.

Oil a baking pan with coconut oil to prevent sticking.

Pour the batter into the oiled pan.

Bake in the oven at 180°C for 40 minutes.

Heat honey in a saucepan to create a natural glaze.

Add softened dried fruit and fresh diced pineapple to the honey for color and flavor.
