1/6 tsp crushed black pepper
2 tbsp water
3 Thai chilis (optional)
5 shallot onions (finely mince one and thinly slice the rest)
1/3 red bell pepper (finely chopped)

In a bowl, whisk together the eggs, curry powder, all purpose seasoning, salt, crushed black pepper, and water until well combined.

Melt the butter in a skillet over medium heat.

Add the finely minced shallot onion and sauté until translucent.

Add the chopped red bell pepper and Thai chilis, if using, and sauté for a few more minutes.

Pour the egg mixture into the skillet, ensuring it covers the vegetables evenly.

Cook until the edges start to set, then gently lift the edges with a spatula to allow uncooked egg to flow underneath.
