Preheat the Ninja air fryer to 170°C for 3 minutes.

Crack 4 eggs into a bowl and add 1/4 teaspoon of pepper and 1/4 teaspoon of salt. Whisk the eggs together.

Add 1/2 cup of frozen mushrooms and 1/2 cup of frozen onions to the egg mixture and stir to combine.

Take the preheated drip trays out of the air fryer.

Pour half of the egg mixture into one drawer and the other half into the second drawer.

Top both omelettes with 1/2 cup of grated cheese, spreading it evenly on top.

Set the air fryer to 180°C and cook for 20 minutes, checking at the 10-minute mark.

After 10 minutes, open the air fryer to check the omelettes. If they are sticking to the sides, gently loosen them.

After 20 minutes, remove the omelettes from the air fryer and place them on a plate for serving.
