Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
Grease a baking tray and set it aside.
Melt butter in the microwave until fully melted.
In a mixing bowl, combine all-purpose flour (or cake flour), baking powder, bicarbonate of soda, castor sugar, cocoa powder, and salt. Mix until well incorporated.
In a heat-resistant bowl, add instant coffee granules and pour in boiling water.
Add milk, vegetable oil, vanilla essence, melted butter, and eggs to the bowl. Mix well.
Combine the wet ingredients with the dry ingredients and mix until everything is well combined, resulting in a rich and chocolatey batter.
Pour the batter into the greased pan and bake in the preheated oven for 30 to 35 minutes.
Insert a toothpick or skewer into the cake to ensure no batter comes out when removed.
Allow the cake to cool in the baking tray for at least 10 minutes. Be careful as the cake is very moist and fragile.
Carefully flip the cake onto a board, leaving the bottom side up for a flatter surface.
In a microwave-safe bowl, add chocolate and milk. Heat in the microwave for 30 seconds and mix until it forms a smooth ganache. Cream may be added for a richer ganache.
Spread the ganache over the cake using the back of a spoon.
Slice the cake and serve.
