Clean beef tripe and intestines thoroughly under cold water.
Cut tripe and intestines into bite-sized pieces.
Heat vegetable oil in a large pot over medium heat until shimmering.
Add chopped onions and sauté until translucent, about 5 minutes.
Stir in minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
Add chopped tomatoes and green bell peppers; cook until softened, about 5 minutes.
Incorporate the tripe and intestines into the pot; mix well to combine.
Season with salt, black pepper, coriander, and paprika; stir to coat the meat.
Pour in enough water to cover the mixture; bring to a boil.
Reduce heat to low and cover; simmer for 2-3 hours until the meat is tender.
Check occasionally, adding more water if necessary to prevent sticking.
Once cooked, adjust seasoning to taste and stir in fresh herbs before serving.
