Incorporate chopped tomatoes, carrots, and bell peppers into the pot.
Pour in beef broth and bring to a simmer.
Season with salt, black pepper, paprika, bay leaves, thyme, and coriander.
Cover and reduce heat to low, cooking for 1.5 to 2 hours until beef is tender.
Add diced potatoes in the last 30 minutes of cooking.
Taste and adjust seasoning if necessary before serving.
Serve hot with rice or sadza.
