Zimbabwe Sadza and Beef Stew

2 cups of white maize meal (cornmeal)
4 cups of water
Salt to taste
1.5 pounds of beef stew meat, cubed
2 tablespoons of cooking oil
1 onion, chopped
2 cloves of garlic, minced
2 tomatoes, diced
1 bell pepper, chopped
2 carrots, peeled and sliced
2 potatoes, peeled and cubed
2 cups of beef broth
1 teaspoon of paprika
1 teaspoon of dried thyme
Salt and pepper to taste

In a large pot, heat the cooking oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

Add the beef stew meat and brown it on all sides.

Stir in the diced tomatoes, bell pepper, carrots, and potatoes. Cook for a few minutes until they start to soften.

Pour in the beef broth and add the paprika, dried thyme, salt, and pepper. Stir well.

Bring the stew to a simmer, then cover and let it cook for about 1.5 to 2 hours, or until the beef is tender and the stew has thickened. Add more water or broth if needed.

While the stew is simmering, prepare the Sadza. In a separate pot, bring 4 cups of water to a boil. Slowly add the maize meal while continuously stirring to avoid lumps. Reduce the heat and continue to cook, stirring regularly, until the mixture thickens and pulls away from the sides of the pot.
