Basbousa

Originating from the Middle East, Basbousa is a beloved semolina cake often enjoyed during celebrations and special occasions. Traditionally, it is soaked in a sweet syrup infused with rose water or orange blossom, giving it a fragrant aroma and moist texture. Today, Basbousa is popular in many countries, including Pakistan, where it is commonly served at weddings and festive gatherings.

3 1/2 cups medium semolina
1 cup of sugar (200 g)
3 tbsp of powdered milk
1 tsp baking powder
1/4 tsp baking soda
2 1/2 cups of water (625 ml)
2 tbsp of tahini to coat the baking pan
blanched almonds to decorate
1-2 tbsp of unsalted butter
3 cups of sugar (600 g) for sugar syrup
2 cups of water (500 ml) for sugar syrup
1/4 tsp citric acid for sugar syrup

Preheat the oven to 400 F (200 C).

In a mixing bowl, combine the semolina, sugar, powdered milk, baking powder, and baking soda.

Gradually add the water to the mixture and stir until well combined.

Grease a 14-inch (35 cm) baking pan with tahini and pour the batter into the pan.

Dot the top with blanched almonds for decoration.

Bake in the preheated oven until golden brown.

While the basbousa is baking, prepare the sugar syrup by combining sugar, water, and citric acid in a saucepan. Bring to a boil and let it simmer until slightly thickened.

Once the basbousa is baked, pour the sugar syrup over it while it's still hot.
