1 cup fine semolina (sooji)
1/2 cup plain flour (maida)
1 tsp baking powder
1/4 cup desiccated coconut
4 tbsp milk
1 cup hot water
3/4 cup sugar
chopped pistachios
Sliced/flaked almonds for sprinkling

Preheat the oven.

In a mixing bowl, combine 2 eggs, 1/4 cup caster sugar, and 1/2 cup oil.

Add 3/4 cup thick yogurt and 1 tsp vanilla flavouring to the mixture.

Stir in 1 cup fine semolina and 1/2 cup plain flour, followed by 1 tsp baking powder and 1/4 cup desiccated coconut.

Mix well until combined.

Pour the batter into a greased baking dish and bake until golden.

In a saucepan, combine 1 cup hot water and 3/4 cup sugar to make sugar syrup; dissolve and set aside.

Once the cake is baked, pour the sugar syrup over it and sprinkle with chopped pistachios.

Let it rest for an hour to allow the syrup to soak in before serving.
