Basbousa

Cultural Context

Originating from the Middle East, Basbousa is a beloved semolina cake often enjoyed during celebrations and special occasions. Traditionally, it is soaked in a sweet syrup infused with rose water or orange blossom, giving it a fragrant aroma and moist texture. Today, Basbousa is popular in many countries, including Pakistan, where it is commonly served at weddings and festive gatherings.

1¼ cups semolina
½ cup castor sugar
½ cup desiccated coconut
4 tbsps ghee
½ cup yogurt
1 tsp baking powder
1½ cups milk
1 cup sugar
3-4 lemon slices
1 tbsp rose water
10-15 almonds, blanched and peeled

Take semolina in a bowl. Add castor sugar, coconut, ghee, yogurt and mix well.

Add baking powder, milk and mix. Set aside for 10 minutes.

Preheat the oven at 180℃.

For syrup, heat a nonstick pan. Add sugar, 1 cup water, lemon slices and cook till the syrup reaches 1 string consistency. Discard the lemon slices. Switch off the heat, add rose water and mix well. Strain in another bowl.

Transfer the semolina mixture in a greased oven proof casserole. Bake in the preheated oven for 10 minutes.

Remove the casserole from the oven and cut into diamonds with the help of a knife. Place and press an almond over each diamond. Place it back in the oven and bake for 20-25 minutes.

Drizzle the prepared sugar syrup while it is still hot and set aside for 10 minutes.
