Basbousa

Originating from the Middle East, Basbousa is a beloved semolina cake often enjoyed during celebrations and special occasions. Traditionally, it is soaked in a sweet syrup infused with rose water or orange blossom, giving it a fragrant aroma and moist texture. Today, Basbousa is popular in many countries, including Pakistan, where it is commonly served at weddings and festive gatherings.

2 Eggs
2/3 Cup Sugar
1 Cup Thick Yoghurt
1/2 Cup Oil
4 tbsp Butter
1 tsp Vanilla powder
2 Cup Semolina
1/2 Cup Crushed coconut
1 tsp Baking Powder
pinch Salt
1 1/2 Cup Sugar (for syrup)
1 Cup Water
1 Slice Lemon

Crack eggs into a bowl.

Add oil, melted butter and yoghurt.

Mix well with a hand whisker.

Then add sugar, salt, vanilla powder, baking powder, crushed coconut and semolina.

Mix well.

Cover the mixture for 10-15 minutes.

Grease a dish with butter or oil.

Pour the cake mixture into the dish.

Tap the dish.

Cut the mixture into square shapes using a knife.

Place the almonds, pistachios, or any other topping on each square.

Pour 2 tbsp melted butter.

Bake for 30 to 35 minutes on 180C.

Pour the syrup immediately after it comes out of the oven.

Rest for 15 minutes.

Add sugar and water to a pan for syrup.

Bring it to a boil 3–4 times.

Add lemon slices to the mixture.

Cook for 1 to 2 minutes.
