Ingredients

  • 1 cup rice
  • 1/2 cup jaggery
  • 4 cups coconut milk
  • 1/4 cup ghee
  • 1/4 cup cashews
  • 1/4 cup raisins
  • 1/2 tsp cardamom powder
  • 1/4 tsp salt

Instructions

  1. 1Wash the rice thoroughly and soak it in water for about 30 minutes.
  2. 2In a pan, heat ghee over medium heat and add the cashews and raisins. Fry until golden brown and set aside.
  3. 3In the same pan, add the soaked rice and sauté for a few minutes until it becomes slightly translucent.
  4. 4Add 4 cups of water to the pan and bring it to a boil. Reduce the heat and let it simmer until the rice is cooked and soft.
  5. 5Once the rice is cooked, add the jaggery and stir until it dissolves completely.
  6. 6Pour in the coconut milk and mix well. Cook for another 5-10 minutes on low heat, stirring occasionally.
  7. 7Add the cardamom powder and salt, and mix well.
  8. 8Remove from heat and let it cool slightly before serving.
  9. 9Garnish with the fried cashews and raisins before serving.
