Ada Payasam

200gm rice ada (dried rice flakes)
500gm jaggery
3 cups thin coconut milk
1.5 cups thick coconut milk
4-5 tablespoons ghee (clarified butter)
1/4 teaspoon cardamom powder
Cashew nuts

Rinse the rice ada thoroughly under cold water.

Soak the ada in water for about 20-30 minutes to soften them.

In a pan, add jaggery and water. Heat and stir until the jaggery dissolves completely to form a syrup.

Strain the syrup to remove any impurities and set it aside.

In a pot, bring 2 cups of water to a boil.

Drain the soaked ada and add them to the boiling water.

Cook the ada until they become soft and translucent, around 15-20 minutes.

Once cooked, drain the ada and set them aside.

In a separate pot, combine the cooked ada and jaggery syrup.

Cook this mixture on low heat for a few minutes, allowing the flavors to blend.

Pour the coconut milk into the pot with the ada and jaggery mixture.

Mix well and let it simmer on low heat, avoiding vigorous boiling.

Add cardamom powder to enhance the flavors.

Stir everything together.

In a small pan, heat ghee.

Fry cashew nuts and raisins until they turn golden brown.

Add the fried cashews and raisins to the Ada Payasam.

Give it a final stir and turn off the heat.
