1 piece of cinnamon
1 tablespoon dried fenugreek
1 teaspoon crushed red chili
1 teaspoon turmeric powder
1 tablespoon red chili powder
1 teaspoon chaat masala
5-6 tablespoons besan (gram flour)
2 tablespoons oil

Wash the surmai fish with salt and vinegar, then pat dry.

Marinate the fish with lemon juice, salt, and ginger-garlic paste. Let it marinate for 1 hour.

In a pan, dry roast whole spices: 1 tablespoon coriander seeds, 1 tablespoon cumin seeds, 1/2 teaspoon ajwain, 1/2 teaspoon nutmeg, 1 teaspoon black pepper, 6-7 cloves, and a piece of cinnamon.

Cool the roasted spices and grind them into a coarse powder.

In a bowl, combine the ground spices with 1 tablespoon dried fenugreek, 1 teaspoon crushed red chili, 1 teaspoon turmeric powder, 1 tablespoon red chili powder, and 1 teaspoon chaat masala. Mix well.

Add 5-6 tablespoons of besan and 2 tablespoons of oil to the spice mixture, then gradually add water to form a thick paste.

Apply the thick batter over the marinated fish, ensuring it's well coated. Let it marinate for an additional 4-5 hours in the refrigerator.

Heat oil in a pan over medium to high heat. Carefully place the fish pieces in the hot oil without stirring for the first 1-2 minutes.

After 1-2 minutes, flip the fish pieces and fry until golden brown and crispy, adjusting the heat as necessary.

Once cooked, remove the fish and place it on paper towels to absorb excess oil. Sprinkle chaat masala on top before serving.
