Preheat the oven to 150 degrees Celsius (or 180 degrees for quicker cooking).

Prepare the ingredients: trim and wash the dry red chili, tomatoes, onions, and garlic.

Place all the prepared ingredients into a roasting bag (or aluminum foil pocket if you don't have a roasting bag).

Add 2 tablespoons of cooking oil, salt, and pepper to the ingredients in the bag.

Tie up the roasting bag and mix the ingredients well.

Place the roasting bag in a suitable pot for the oven (a metal pot can also be used).

Roast in the preheated oven for about 45 minutes (or 30 minutes at 180 degrees).

After roasting, remove from the oven and let it cool slightly, but do not let it cool completely.

Use a hand blender (or food processor) to chop and blend the roasted ingredients until smooth.

If necessary, remove excess juice before blending; add it back later for flavor.

Transfer the blended chili sauce into a sterilized bottle or jar, leaving it open until completely cool before sealing the lid.

Store the chili sauce in the fridge for up to 10 days; once opened, consume within 4-5 days.
