Babenda Recipe - Stewed Greens from Burkina Faso - Vegan

Bring a couple liters of water to a boil in a big pot.

Remove the thicker part of the kale stems and chop the leaves into 1 inch pieces.

Chop the longer parts of the dandelion stems and leaves into similar sized pieces.

Add the chopped kale and dandelion greens to the boiling water and stir.

Cover and cook for about 20 minutes until the greens start to wilt.

Roast raw peanuts in a pan for a few minutes until slightly brown.

Process the roasted peanuts in a food processor until they reach a medium texture.

Add the processed peanuts to the pot with the greens.

Add about 1 cup of rinsed white rice to the pot.

Add about 1 tablespoon of baking soda to the pot as a thickener and emulsifier.

Cook for another 30 minutes until the rice is cooked and everything reduces into a thick puree.
