HOW TO MAKE BURKINA DEGUE/THIAKRE FROM SCRATCH

Originating from Burkina Faso, Degue is a traditional dish made from millet and yogurt, often enjoyed as a refreshing meal or snack. It reflects the agricultural practices of the region, where millet is a staple grain. This dish is not only nourishing but also embodies the communal spirit of sharing food in Burkinabé culture. Today, Degue has gained popularity beyond its borders, with variations appearing in other West African countries and among health-conscious eaters worldwide.

Vanilla bean enhances aroma and taste.
Measure 1.5 cups of millet flour into a bowl.
Add desired amount of salt to the flour.
Gradually add water, starting with half a cup, while mixing with hands to form pearls.
Continue adding water bit by bit until the desired pearl size is achieved.
Transfer larger pearls to another bowl and continue forming smaller pearls.
Once pearls are formed, transfer them to a sieve for steaming.
Steam the pearls for 20-25 minutes, flipping them halfway through.
After 20-25 minutes, check the pearls and add 1-2 tablespoons of water if they seem dry, then cover and steam for an additional 30 minutes.
Once cooked, allow the pearls to cool and separate them as needed.
In a mixing bowl, combine about five scoops of the pearls with ice cubes, homemade yogurt, Greek yogurt, vanilla sugar, and a little white sugar.
Add a small amount of milk to achieve desired thickness and mix everything together.
