🥗Healthier: chicken

💰Cheaper: pork

Chicken is a leaner option, while pork is generally less expensive.

1

Start with the leg of goat, also called the shoulder, which is super soft.

2

Prepare the marinade using lemon juice, cooking oil, soy sauce, and black pepper.

3

Squeeze the juice of one lemon into a bowl, removing any seeds.

4

Add freshly ground black pepper to the lemon juice.

5

Pour in soy sauce, which acts as salt and adds flavor and color to the meat.

6

Finely chop two sprigs of rosemary and add to the marinade.

7

Add about 100 ml of cooking oil to the marinade and mix well.

8

Optionally, score the meat to help it cook faster and allow the marinade to penetrate.

9

Apply the marinade generously on both sides of the meat, ensuring it gets into the cuts.

10

Preheat the grill to high heat before cooking the meat.

11

Place the meat on the grill, starting on high heat to brown one side for about 5 minutes.

12

Reduce the heat to medium when turning the meat to the other side.

13

Baste the meat with the marinade using the rosemary after browning both sides.

14

Cover the grill with a lid or aluminum foil to help the meat cook evenly if using an open grill.

15

Check for doneness by looking for red liquid coming out from the top of the meat and ensuring it pulls away from the bone.
