Prepare a brine by boiling water and dissolving salt in it.
Add cold water to the brine once the salt dissolves.
Add lemon zest, lime zest, bay leaves, black peppercorns, and crushed garlic to the brine.
Cool the brine completely before adding the goat meat.
Trim the goat leg by removing unwanted parts and excess fat while leaving some fat for moisture.
Submerge the goat leg in the brine, cover, and refrigerate overnight or for 24 hours.
Preheat the oven to 200 degrees Celsius.
Heat a wide-based pan and add a bit of oil to prevent sticking.
Sear the goat leg in the hot pan until golden brown on the outside.
Wrap the goat leg in foil and place it in the oven to roast.
Roast the goat leg at a high temperature for 45 minutes, checking every 10-15 minutes.
Prepare side dishes: wash baby potatoes and season with salt, black pepper, garlic, and rosemary before roasting them in the oven.
Season sweet corn lightly with salt, pepper, and butter before adding to the oven with the potatoes.
Prepare kachumberi by deseeding tomatoes and chopping onions, bell peppers, and chili peppers.
Soak onions in salt water to reduce pungency, then mix with tomatoes, bell peppers, and fresh herbs.
Season kachumberi with salt, black pepper, and olive oil, then refrigerate until serving.
After 45 minutes, remove the goat leg from the oven and let it rest to allow juices to settle.
