Black beans offer similar texture and flavor.

Quinoa provides protein while bulgur is often cheaper.
Wash lentils thoroughly.
Measure out 4 cups of water for cooking.
Boil lentils for about 15 to 20 minutes, optionally adding 1-2 bay leaves.
Wash rice until the water runs clear, indicating it's clean.
Dice the onion and chop the garlic.
Chop tomatoes into chunks and blend them.
Drain the lentils, reserving the cooking water in a bowl.
In the same pot, heat oil and ghee together.
Add diced onions and sauté until translucent.
Add cumin seeds and sauté for 1-2 minutes.
Add curry powder and sauté for 2-3 minutes.
Add chopped garlic and sauté, ensuring it doesn't burn.
Add blended tomatoes to the pot.
Add garam masala, black pepper, and salt; allow to simmer for a few minutes.
Add rice to the tomato mixture and stir to coat.
Add lentils and reserved lentil water to the pot.
Cook until rice is done, checking at 15 minutes.
When nearly done, add chopped coriander and let it steam with the rice.
