Mbuzi Choma, or grilled goat, is a beloved dish in Kenya, often enjoyed during celebrations and gatherings. Score the goat meat and remove any unwanted pieces, leaving the fat intact.
Depending on the size of your oven, either cook the goat whole or slice it into medium pieces.
Preheat the oven to 180 degrees Celsius (around 356 degrees Fahrenheit).
Clean the meat if desired, then drain any excess water and pat it dry.
Make a mild rub with vegetable oil, lemon or lime, and salt.
Apply the rub on the surface of the foil, then place the meat pieces on top.
Score the meat to ensure even roasting.
Wrap each piece of meat individually in foil, ensuring no leaks to retain natural juices and fats.
Roast in the oven for around 1 hour 45 minutes to 2 hours at 150 degrees Celsius (around 302 degrees Fahrenheit).
After roasting, check the meat; it should be very soft and falling off the bone.
