Mbuzi Choma, or grilled goat, is a beloved dish in Kenya, often enjoyed during celebrations and gatherings. Traditionally, it showcases the rich flavors of marinated meat cooked over an open flame, symbolizing community and togetherness. This dish has gained popularity beyond Kenya, with variations appearing in East African cuisine and among diaspora communities worldwide.

Make small holes in the goat leg to help the marinade penetrate.
Mix together the marinade ingredients including 1 tablespoon of cinnamon and vegetable oil.
Apply the marinade to the goat leg, ensuring it is well covered.
Let the marinated goat leg rest for 45 minutes to 2 hours, covering it with clean film if refrigerating.
Preheat the oven to 200 degrees Celsius.
Place the goat leg on a tray, applying a little oil to the tray first.
Put the goat leg in the oven and set a timer for 60 to 90 minutes.
After 60 minutes, check if the goat leg is ready by checking its smell and appearance.
Garnish the cooked goat leg with coriander and onions before serving.
If desired, return the goat leg to the oven for an additional 10 minutes at a reduced temperature of 100 degrees Celsius.
