1

Cut off the stems of the okra and cut the okra into quarters.

2

In a large bowl, add the okra, 2 tbsp of gram flour, and 1 tbsp of rice flour.

3

Season with salt, chili powder, turmeric powder, ground cumin, garam masala, 1 tsp of ground green chili, 1 tsp of freshly grated ginger, and amla powder.

4

Add the juice of half a lemon and 0.5 tsp of sunflower oil to the bowl and mix well to coat the okra with the spice mix.

5

Place the okra in the air fryer basket, being careful not to overcrowd them.

6

Spray the okra with a bit of oil spray and air fry at 180°C for about 12 minutes, giving them a quick mix halfway through and spraying again with oil spray.

7

Chop 6 onions into strips and place them in a large bowl.

8

Add gram flour, rice flour, salt, chili powder, turmeric powder, finely chopped green chilies, lemon juice, and chopped coriander to the bowl with onions.

9

Add water to create a thick batter, ensuring the onions are coated without being too runny.

10

Line the air fryer basket with a silicone mat and portion the batter onto the mat without overcrowding.

11

Spray with olive oil spray and cook at 180°C for about 15 minutes, flipping halfway through and spraying with more olive oil spray.

12

Boil 500 g of peeled potatoes in salted water for 15 to 20 minutes until cooked through, then drain.

13

Mash the boiled potatoes and add salt, turmeric powder, chili powder, 1 finely chopped green chili, 1 tsp of freshly grated ginger, 0.5 tsp of ground cumin, 0.5 tsp of garam masala, and 0.5 tsp of chart masala.

14

Add the juice of half a lemon and 2 tbsp of chopped coriander, then mix well.

15

Add 1 tbsp of corn flour to the mixture and mix to ensure even distribution of spices.

16

Shape the mixture into 6 even patties, flattening them slightly.

17

Brush both sides of the patties with sunflower oil and place them in the air fryer basket, ensuring not to overcrowd.

18

Air fry at 200°C for 20 minutes, flipping halfway to ensure even crispiness.
