Gujarati Kadhi

2-3 tbsp Chickpea flour
2 glasses water
2 tbsp cooking oil
1 tsp Mustard seeds
1 tsp Cumin seeds
Methi (Fenugreek) seeds
4 Cloves
Cinnamon
1-2 Green Chilli
2-3 Whole red chillies
pinch of Asafoetida
few pieces of Jaggery
Salt
few Curry Leaves
Fresh coriander leaves for garnish

Take 1 cup of Curd, approximately 4 big Tbsp.

Add around 2-3 tbsp of Chickpea flour and whisk everything to a smooth consistency without lumps.

Add around 2 glasses of water to the mixture.

In a kadhai, heat 2 tbsp of cooking oil.

Once the oil is hot, add Methi seeds, 1 tsp Mustard seeds, 1 tsp Cumin seeds, 4 Cloves, and Cinnamon.

Add 1-2 green chillies, 2-3 whole red chillies, and a pinch of Asafoetida to the tempering.

Add the curd & chickpea flour slurry to the tempering.

Add a few curry leaves and pieces of jaggery, then add salt to taste.

Stir and mix well to combine the mixture.

On medium-low to medium heat, let the kadhi mixture come to a boil, cooking for about 8-10 minutes while stirring in between to avoid lumps.

Turn off the gas and transfer the kadhi to a bowl, garnishing with fresh coriander leaves.
