1 teaspoon cumin seeds
1 teaspoon fenugreek seeds
2-3 whole dried red chilies
2-3 green chilies
2-3 curry leaves
2-3 cloves
2-3 cardamom pods
2-inch piece of ginger
7-10 garlic cloves

Prepare the spice mixture by grinding 6-7 green chilies, a 2-inch piece of ginger, 4-5 pieces of dried red chilies, 10 garlic cloves, 5 cardamom pods, and 1 tablespoon of cumin seeds without adding water.

In a bowl, take 300 grams of fresh yogurt that is not too sour.

Add 2-3 tablespoons of gram flour to the yogurt and blend the mixture until smooth.

Start heating a pan and add 2 cups of water to it.

Add the ground spice mixture (2 tablespoons) to the water in the pan.

Add 1 teaspoon of fenugreek seeds, 2 tablespoons of sugar, and 2 teaspoons of rock salt to taste.

Stir continuously until the mixture comes to a boil, then simmer on low heat for 5 minutes.

In a separate small pan, heat 1 tablespoon of ghee and add 1 teaspoon of mustard seeds, 2-3 dried red chilies, 1 teaspoon of cumin seeds, and 2-3 cardamom pods.

Once the mustard seeds start to splutter, turn off the heat and add 1 teaspoon of asafoetida and curry leaves.

Pour this tempering into the boiling kadhi and let it simmer for 1 minute.

Add 1 tablespoon of chopped cilantro and 1 tablespoon of chopped mint before serving.
