4 oz pancetta, diced
1 medium carrot, diced
1 small onion, diced
1 rib celery, diced
1 lb ground lamb
1 ¼ cups dry white wine
28 oz can crushed tomatoes (San Marzano preferred)
¼ cup heavy cream
1 lb pappardelle pasta
Kosher salt & black pepper to taste
Grated Parmigiano Reggiano (optional)
Fresh parsley (optional)

Dice the pancetta, carrot, onion, and celery.

In a large pot, cook the pancetta until crispy.

Add the diced vegetables and sauté until softened.

Stir in the ground lamb and cook until browned.

Pour in the dry white wine and let it reduce.

Add the crushed tomatoes and season with salt and pepper.

Simmer the sauce slowly to develop flavors.

Cook the pappardelle pasta according to package instructions.

Stir in the heavy cream at the end of cooking the sauce.

Serve the sauce over the cooked pappardelle and garnish with optional Parmigiano Reggiano and parsley.
