800 g lamb shoulder, cut into chunks
3 cups hot water
1 tbsp teriyaki BBQ sauce
1 tbsp Worcestershire sauce
2 tbsp tomato paste
1 medium onion, cubed
2 medium potatoes, cubed
½ medium bell pepper, cubed
2 cloves garlic, minced
1 tsp salt
1 tsp Tex-Mex seasoning
½ tsp dried basil
½ tsp black pepper
Fresh thyme sprigs
Oil, for frying

Heat oil in a skillet over medium heat.

Add the lamb shoulder pieces, salt and fry until browned on all sides. Remove and set aside.

In the same skillet, add the onion and sauté for 2 minutes.

Add bell pepper and garlic, cooking for another 3 minutes.

Stir in teriyaki BBQ sauce, Worcestershire sauce, tomato paste, Tex-Mex seasoning, basil, black pepper, and thyme sprigs.

Cook for 2 minutes to allow the flavors to develop.

Return the lamb to the skillet and stir well. Cook for 5 minutes.

Add potatoes and mix thoroughly.

Pour in 3 cups of water.

Cover with a piece of damp parchment paper, then seal with foil.

Bake in a preheated oven at 190°C (375°F) for 2 hours.
