Chinese Glutinous Rice, also known as Sticky Rice, has deep roots in Chinese culinary traditions, often served during festivals and celebrations. It symbolizes unity and prosperity, making it a staple during family gatherings and special occasions. Today, variations exist globally, with different fillings and cooking methods, reflecting the dish's adaptability and enduring popularity.

Start by measuring 1 and 1/2 cups of glutinous rice and 1/2 cup of jasmine rice.
Pour hot boiling water over the rice and let it soak for 15 minutes.
While the rice is soaking, prepare the mushrooms by slicing fresh shiak mushrooms and microwaving them for 1 minute.
Rehydrate dried prawns by pouring hot water over them and giving them a rough chop.
Chop 2 cloves of garlic and add them to the sauté pan with some oil to sauté until fragrant.
After microwaving, squeeze out the excess water from the mushrooms.
Add soy sauce, Chinese wine, chicken powder, dark soy sauce, and sugar to the mushrooms and mix well.
Wash the soaked rice to remove excess starch, which helps lower the GI of the rice.
In the Instant Pot, heat oil and sauté the garlic and rehydrated prawns until aromatic.
Add the rice to the pot and coat it with the oil to keep the grains separate.
Add the mushrooms to the rice and mix.
Pour in just enough water to cover the rice, about 1 cup and a little bit, since the rice has already swelled from soaking.
Place the L Chong on top of the rice without stirring it in.
Close the Instant Pot and set it to the rice function for 12 minutes, noting that it will take time to pressurize before cooking starts.
After cooking, let the rice rest for at least 15 minutes before releasing the pressure.
Fluff the rice and serve, adding scallions, brace peanuts, fried shallots, and XO chili sauce for extra flavor.
