50g caster sugar
25g of butter
2 eggs
150ml of buttermilk

Add flour, baking powder, bicarbonate of soda, and caster sugar to a large bowl.

In a separate bowl, add melted (and cooled) butter, 2 eggs, and buttermilk. Whisk these wet ingredients together until the mixture is smooth throughout.

Make a well in your bowl of dry ingredients, and pour in your wet ingredients. Pour in your ingredients slowly, whisking the mixture as you go.

Lightly oil your frying pan and place on medium heat. Pour in your pancake batter. Aim to pour to the circumference of a CD - perfect pancake size.

Cook on one side until bubbles appear (1-2 minutes).

Flip and cook the other side for another 1-2 minutes.

Keep warm in a low oven or serve immediately with your toppings of choice.
