Khoya Barfi

3 litres of milk
10 green cardamoms
90 grams of sugar
30 grams of ghee(clarified butter)

Pour 3 litres of milk into a pan.

Turn on flame on high and once milk is warm stir frequently.

Throw in 10 green cardamoms.

Once the milk starts boiling you can temporarily turn down the flame a little to prevent overspilling.

When the milk has reduced to about half its original quantity, you can remove the cardamoms.

Keep stirring. The milk will continue to reduce and thicken and eventually turn into khoya.

When it has thickened more, turn the flame to low.

Add 90 grams of sugar and mix.

When it has become thicker and browner, turn off the flame.

Move the curd(khoya) to another pan.

Add 30 grams of ghee(clarified butter) and mix.

Cover and leave for 30 minutes.

Line a tray with baking paper and brush with some ghee(clarified butter).

Put the khoya barfi into the tray and level.

Cover and let set for 2 hours.

Cut into pieces.
