Lohikeitto

Cultural Context

Lohikeitto, or Finnish salmon soup, hails from Finland and is a beloved comfort food. Traditionally enjoyed during cold winters, it showcases the country's fresh salmon and root vegetables, reflecting the Finnish connection to nature and seasonal ingredients. Today, it is enjoyed year-round and has inspired variations across Nordic countries.

FIFImain
4 servings
Servings4
400 grams trout or salmon fillets
1.6 liters water
2 medium potatoes
1 carrot
2 cloves garlic
1 medium onion
200 ml cream (10-20% fat)
3-4 bay leaves
3-4 peppercorns
1 tsp chopped greens
1 tsp red chili pepper
1

Boil water (~1.6 liter / 54 fl oz). When it comes to a boil, add the fish pieces. You can use salmon or trout.

2

Cook over medium heat until the fish is done (about 5 to 8 minutes). In the meantime, chop carrots, onions, garlic and potatoes.

3

When the fish is cooked, take it out and set it aside to cool.

4

At this time add the vegetables to the broth, then add salt, bay leaves and pepper. Cook for about 10 minutes.

5

While the vegetables are boiling separate the fish from the bones. Then check if the potatoes are cooked and, if it is ready, add the fish fillets to the soup.

6

Afterwards add the red pepper and pour in the cream (200 ml or 3/4 cup). Mix well.

7

Turn off the heat, add the finely chopped greens, and leave the soup for 10 minutes. Then serve it up and enjoy!
