4 medium potatoes, peeled and chopped (300 g)
1 litre of water
1 tablespoon vegetable stock
salt to taste
2 bay leaves
400 g salmon fillets
300 ml double cream (heavy cream)
1/2 cup mozzarella cheese (100 g)
1 bunch dill, roughly chopped (about 30 g)

Melt 2 tablespoons unsalted butter in a large pot.

Add 1 large finely chopped leek and sauté until softened.

Add 1 medium chopped carrot and 4 medium peeled and chopped potatoes (300 g) to the pot.

Pour in 1 litre of water and add 1 tablespoon vegetable stock and salt to taste, along with 2 bay leaves.

Cook for 15 minutes.

Add 400 g salmon fillets to the pot.

Pour in 300 ml double cream (heavy cream) and add 1/2 cup mozzarella cheese (100 g).

Cook for 20 minutes.

Stir in 1 bunch of roughly chopped dill (about 30 g).
