Bring to a simmer and cook for 30 minutes, allowing flavors to meld.
Mix in the peanut butter until fully incorporated into the sauce.
Add the eggplant, banana heart, string beans, and bitter melon to the pot.
Continue to simmer until the vegetables are tender, about 10-15 minutes.
Season with fish sauce, salt, and black pepper to taste.
In a small bowl, mix rice flour with water to create a slurry and add to the pot to thicken the sauce.
Cook for an additional 5 minutes until the sauce reaches desired consistency.
