1

Soak 1 cup of chickpeas in water overnight.

2

Drain the soaked chickpeas and boil them in a pressure cooker with 1 to 1.5 cups of water for 5 to 6 whistles.

3

Dry roast 1/4 cup of sesame seeds on low flame for 1 minute.

4

Blend the roasted sesame seeds into a powder, then add 3 to 4 tablespoons of olive oil and blend again to make tahini.

5

After the pressure cooker cools, check if the chickpeas are soft; if not, boil for 2 more whistles.

6

Remove the water from the boiled chickpeas and optionally peel them for a smoother texture.

7

In a blending jar, add the boiled chickpeas, 4 to 5 peeled garlic cloves, 1 tablespoon of lemon juice, the tahini, 1/3 teaspoon of cumin powder, and salt (about half a teaspoon).

8

Add 4 to 5 tablespoons of olive oil and blend without water first.

9

Gradually add the chickpea stock to achieve desired consistency while blending.

10

Blend until the hummus reaches the desired texture, adding more water or olive oil if necessary.

11

Serve the hummus drizzled with olive oil and sprinkled with paprika powder.
