Today, variations of hummus are enjoyed worldwide, with each region adding its unique twist to the classic recipe.

Add the juice of one lemon to a blender or food processor, removing seeds.
Add 2 cans of rinsed and drained chickpeas.
Add 4 teaspoons of tahini, 1/2 teaspoon of ground cumin, and 1 teaspoon of sea salt flakes.
Add 2 peeled cloves of garlic without grating or mincing.
Add about 100 milliliters of cold water.
Attach the lid with a hole in the middle to pour olive oil gradually while blending.
Blend until smooth, then pour about 100 milliliters of olive oil into the funnel while blending.
Once emulsified, transfer to a serving bowl and smooth the top.
Scatter reserved chickpeas on top, drizzle with a tablespoon of olive oil, sprinkle with sweetened paprika, and garnish with flat leaf parsley.
