1-2 small tomatoes diced
1 large onion diced
1/8 cup oil

Heat a large skillet over medium-high and add onion. Cook without oil for about 5-7 minutes until they start to brown.

Add about 1 tbls of cooked mixture and evenly distribute it to the trays.

Cook eggs approx 18-20 mins. Fill them 3/4 of the way up to prevent overflow.

Allow to cool for about 10 minutes before removing them.

Grab your bread, injera or english muffin and add the egg to it, top with your choice of cheese.
