Preheat oven to 375 degrees F (175 degrees C).
Heat a large skillet over medium-high and add onion. Cook without oil for about 5-7 minutes until they start to brown.
Add oil and sauté for 5-10 minutes.
Add tomatoes and cook until tomatoes are soft and mushy.
Crack 5 eggs, add salt, black pepper and beat together.
Add Ginger Garlic cube to tomatoes and onions.
Add Peppers and sauté for about 5 mins.
Grab your muffin tins and use non stick spray.
Add about 1 tbls of cooked mixture and evenly distribute it to the trays.
Add eggs and stir.
Cook eggs approx 18-20 mins. Fill them 3/4 of the way up to prevent overflow.
Allow to cool for about 10 minutes before removing them.
Grab your bread, injera or english muffin and add the egg to it, top with your choice of cheese.
Melt the cheese for about 5 minutes.
