Jamaican Goat Curry

Jamaican Goat Curry has its roots in the rich culinary traditions of Jamaica, where goat is a popular protein choice. This dish is often prepared for special occasions and family gatherings, celebrating the island's vibrant flavors and spices. The use of scotch bonnet peppers and allspice reflects the bold and aromatic nature of Jamaican cooking. Today, it has gained popularity beyond the Caribbean, enjoyed by many around the world who appreciate its unique taste and warmth.

Evaporated milk is more affordable and still creamy.
Make a green marinade with spring onions, green bell peppers, parsley, coriander, thyme, onions, garlic, and oil to bind.
Blend or chop the ingredients to a paste, adding lime juice and all spice.
Prepare goat meat by cleaning, trimming excess fat, and patting dry.
Season goat meat with black pepper, salt, complete seasoning, chili powder, ginger powder, garlic powder, and all spice.
Add 1 tablespoon of madas curry and 2 tablespoons of green marinade to the goat meat and massage well.
Cover and refrigerate the marinated goat meat overnight or for at least 4 hours.
Heat 2-3 tablespoons of oil in a pot over medium to high heat.
Add 1 teaspoon of madas curry to the oil and let it heat up.
Add chopped onions and stir-fry for 1 to 1.5 minutes.
Add the marinated goat meat to the pot and let it sit for about 10 minutes to develop its juices without adding water.
Once juices are released, add 1 red scotch bonnet pepper with a slit for extra heat and 2 teaspoons of green marinade.
Add 2.5 cups of warm water to the pot, rinsing the marinade bowl to capture extra flavors.
Cover the pot and cook on medium to low heat for about 1 hour.
