Heat the avocado oil in a Dutch oven over medium-high heat.
Sear the chuck roast pieces until browned on all sides.
Remove the beef and set aside. In the same pot, add the onions, leeks, and garlic, cooking until softened.
Stir in the tomato paste and balsamic vinegar, cooking for another minute.
Return the beef to the pot and add the beef stock, salt, pepper, potatoes, carrots, celery, bay leaf, and thyme.
Bring to a simmer, then cover and reduce heat to low, braising for several hours until the beef is tender.
If desired, mix cornstarch with a little water to create a slurry and stir into the stew to thicken before serving.
