Shrimp Mofongo

Peel the garlic and mash it in a mortar until it resembles a paste.

Dice a small piece of sweet red pepper and chop the cilantro.

Heat a pan over medium heat and add less than a quarter cup of olive oil.

Add half of the mashed garlic to the oil and lower the heat to low to prevent burning.

Butterfly the shrimp and add a few drops of the reserved garlic oil and about two tablespoons of sour orange juice to it, mixing well.

Add a pinch of salt and a little bit of garlic pepper sauce to the shrimp mixture, then cover and refrigerate to marinate for a few hours.

Heat a frying pan without any oil and add the marinated shrimp.

Sprinkle paprika over the shrimp for color and stir.

Add a drop of olive oil to the pan and cook the shrimp for about a minute on each side.
