Puerto Rican Stuffed Yellow Plantains

Originating from Puerto Rico, stuffed yellow plantains reflect the island's vibrant culinary traditions, combining sweet and savory flavors. This dish is often enjoyed during family gatherings and celebrations, showcasing the use of local ingredients. Modern variations may include different types of fillings, such as seafood or vegetables, making it a versatile favorite.

Ground turkey is leaner and lower in calories.

Nutritional yeast provides a cheesy flavor without dairy.
Cut off each end of the sweet plantains.
Run a knife along the side of the plantains to peel them, being careful not to cut too deep.
Peel the plantains back like a banana once sliced.
Fry the peeled plantains until golden brown.
Prepare a fresh sofrito by sautéing an onion, green pepper, and red pepper.
Add 10 minced aji dulce peppers to the sofrito.
Season the sofrito with adobo seasoning and add ground beef.
Add garlic powder and oregano to the ground beef, crushing the oregano between fingers.
Incorporate Grace's browning sauce into the ground beef mixture.
Add cilantro and olives to the picadillo mixture.
Slice the fried plantains down the middle and spread them open to form canoes.
Stuff the canoes with mozzarella cheese and Puerto Rican cheese.
Add the ground beef mixture into the canoes on top of the cheese.
Top with more cheese, piling it on as desired.
Bake the stuffed plantains until the cheese is melted and bubbly.
Drizzle with jalapeno cilantro crema before serving.
Serve with white rice and sliced avocado.
