Marinate the skirt steak for at least 2 hours, preferably overnight.

Prepare the sauce by mixing mayo, ketchup, and a couple of dashes of hot sauce. Refrigerate until ready to use.

Cut both ends off the plantains, slice down one of the ribs, and peel them.

Cut the peeled plantains in half, then cut each half again to create quarters.

Heat oil in a pan over medium to medium-high heat and fry the plantain pieces until they are a nice yellowish color, not dark brown.

Flatten the fried plantains using wax paper and a spatula until they are about an eighth of an inch thick.

Return the flattened plantains to the hot oil and fry until golden brown.

Cook the marinated skirt steak in a pan with a little oil for a couple of minutes until nicely seared.
