3 cups chicken stock
1 cup water
2 bay leaves
3/4 cup cut carrots
1.5 cups cut and largely cubed potatoes
2 tablespoons olive oil
6-8 ounces smoked ham steak (optional)
1/2 medium onion chopped
1 teaspoon minced garlic
3 tablespoons sofrito
5 ounces tomato sauce
2 tablespoons fresh chopped cilantro
1.5 tablespoons green salad olives with pimentos preferably

2 15 ounce cans red kidney beans or beans of your choice
4 cups chicken stock
1 cup water (optional)
