Instructions
- 1In a mixing bowl, combine the all-purpose flour, salt, ajwain, turmeric powder, and red chili powder.
- 2Gradually add water to the dry ingredients and knead to form a smooth dough.
- 3Cover the dough with a damp cloth and let it rest for about 30 minutes.
- 4After resting, divide the dough into small balls.
- 5Roll each ball into a thin circle, about 1/8 inch thick.
- 6Cut the rolled dough into strips or diamond shapes using a knife or pizza cutter.
- 7Heat oil in a deep frying pan over medium heat.
- 8Once the oil is hot, carefully add the cut strips to the oil in batches.
- 9Fry until they turn golden brown and crispy, about 2-3 minutes per batch.
- 10Remove the fried Namak Parey and drain on paper towels to remove excess oil.
- 11Allow to cool before serving.

- 4Divide the dough into small balls. Roll each ball into a thin circle.
- 5Spread a layer of the potato filling on one half of the circle, then fold the other half over to form a semi-circle. Seal the edges by pressing them together.
- 6Cut the semi-circle into strips to form pinwheels. You can twist them for a decorative effect.
- 7Heat oil in a deep frying pan over medium heat. Fry the pinwheels until golden brown and crispy.
- 8Remove from oil and drain on paper towels to remove excess oil.
- 9Serve hot with chutney or sauce of your choice.
