Mango Barfi

2-3 medium mangoes (Aam) cubes
10-12 almonds (Badam)
10-12 cashew nuts (Kaju)
2 tablespoons ghee
250g khoya
4 tablespoons sugar (or to taste)
½ teaspoon cardamom powder (Elaichi powder)
2 cups desiccated coconut (Sukha nariyal)
edible silver leaves (Chandi warq)
sliced pistachios (Pista)

In a blender jug, add mangoes and blend to puree, then set aside.

In a grinder, add almonds and cashew nuts and grind to make powder, then set aside.

In a wok, add ghee and let it melt.

Add mango puree (approximately 1 & ½ cups), mix well, and cook on medium flame for 2-3 minutes.

Add khoya and mix until well combined.

Add sugar, cardamom powder, almond and cashew powder, and desiccated coconut, mix well, and cook on low flame until it leaves the sides of the pot (10-12 minutes).

On a greased dish or mold, add the prepared mixture and spread evenly.

Garnish with edible silver leaves, sprinkle pistachios, and press gently.

Cut into desired pieces, let it set for 3-4 hours, and serve.
