In a skillet with olive oil, sauté the onion and the chopped garlics, stirring from time to time, until they are browned.

Add the minced meat, the ham, spice with salt and cook until it gains color.

Add a little parsley, a glass of white wine, season with aromatic herbs and pepper, mix well and cook for 5 minutes. Remove from heat and let cool.

Heat a pan with butter, a pinch of salt and let it melt.

Add the water and bring to a boil, then the flour, mix very well, until the dough comes away from the bottom of the pan. Remove and let cool.

Roll out the dough on a table, cut into two parts. Roll out the dough again using a rolling pin.

Place some of the filling on top, fold the dough and cut. Press the edges of the dough.

In a bowl, beat the eggs with a fork. Coat the rissóis in beaten egg and then in breadcrumbs.

Heat the oil in a deep fryer. When the oil is very hot, add the rissóis and fry them until golden.

Place the rissóis on a plate with absorbent paper.

Optionally, place the rissóis on an oven tray, lined with aluminum foil. Bake in a preheated oven at 200°C for about 30 minutes or until golden.
